- 4 ears of corn (grilled and kernels cut off)
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup cotija cheese (crumbled)

- Fresh cilantro (chopped, for garnish)
- Salt and pepper to taste
Instructions
- Start by grilling the corn ears over medium heat until you see beautiful char marks, about 10–15 minutes. Turn them occasionally to ensure even cooking. Once they’re done, let them cool slightly before cutting off the kernels.
- In a large bowl, combine the grilled corn kernels, mayonnaise, sour cream, cotija cheese, chili powder, garlic powder, and freshly squeezed lime juice.
- Using a spatula, mix everything together until you achieve a harmonious blend of ingredients.
- Taste the mixture and adjust seasoning with salt and pepper. Remember, you want to highlight the freshness of the corn and the creaminess of the dip.
- Transfer the mixture to a serving dish and artfully garnish with chopped cilantro, adding a pop of fresh green color.
