- 1 lb salmon fillet, cut into cubes
- 1 cup panko breadcrumbs
- 1/2 cup flour
- 2 eggs, beaten
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- Salt and pepper to taste
- Oil spray (for air frying)
Instructions
- Preheat your air fryer to 400°F (200°C), or heat oil in a deep skillet for frying.
- Season the salmon cubes generously with salt and pepper.
- Set up your breading station using one bowl for flour, another for the beaten eggs, and a third for the panko breadcrumbs.
- Dredge each salmon cube in flour, then dip into the egg mixture, letting any excess drip off, and finally roll in panko.
- Lightly spray the bites with oil for air frying, or gently lower them into the hot oil if frying.
- Cook in the air fryer or oven for about 10-12 minutes until golden brown and crispy.
- Mix the bang bang sauce by combining mayonnaise, sweet chili sauce, and sriracha in a bowl.
- Serve immediately with the bang bang sauce for dipping.
Notes
Keep salmon chilled until ready to cut for easier handling. Use one hand for wet dipping and the other for dry breading to minimize mess.
