Description

Delightfully crispy on the outside and tender on the inside, these smashed carrots bring a healthy twist to any meal with their inviting aroma and enchanting appearance.


Ingredients

Scale
  • 2 lbs fresh carrots
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • Optional seasonings: garlic powder, fresh herbs (rosemary or thyme), paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the fresh carrots.
  3. Place the carrots in a pot of boiling water and cook for about 10 minutes.
  4. Drain the cooked carrots and let them cool.
  5. Smash each carrot using the back of a fork or palm of your hand.
  6. Toss the smashed carrots in a mixing bowl with olive oil, salt, pepper, and optional seasonings.
  7. Spread the carrots on a baking sheet.
  8. Roast for 20-25 minutes until golden and crispy.
  9. Serve warm, garnished with fresh herbs if desired.

Notes

Make-Ahead Tips: You can boil the carrots a day in advance and store in the refrigerator. Reheat in the oven or air fryer before serving.
