Ingredients

- 2 lbs fresh carrots
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
- Optional seasonings: garlic powder, fresh herbs (rosemary or thyme), paprika
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the fresh carrots.
- Place the carrots in a pot of boiling water and cook for about 10 minutes.
- Drain the cooked carrots and let them cool.
- Smash each carrot using the back of a fork or palm of your hand.
- Toss the smashed carrots in a mixing bowl with olive oil, salt, pepper, and optional seasonings.
- Spread the carrots on a baking sheet.
- Roast for 20-25 minutes until golden and crispy.
- Serve warm, garnished with fresh herbs if desired.
Notes
Make-Ahead Tips: You can boil the carrots a day in advance and store in the refrigerator. Reheat in the oven or air fryer before serving.
