- 12–14 pound turkey
- Fresh rosemary
- Fresh thyme
- Fresh sage
- 1 cup unsalted butter
- 4 cloves garlic, chopped
- 1 onion, quartered
- 2 cups vegetable stock
- Salt, to taste
- Pepper, to taste
Instructions
- Rinse the turkey under cold water and pat it dry with paper towels. Remove the giblets from the cavity.
- Season the inside with salt and pepper.
- Mix softened butter, garlic, herbs, salt, and pepper in a bowl.
- Loosen the skin over the turkey breast and rub some herb butter beneath the skin. Use the rest to coat the exterior.
- Pack stuffing loosely into the cavity if desired, and close it with kitchen string or skewers.
- Preheat the oven to 325°F (165°C). Place the turkey on a roasting rack in a pan, add vegetable stock, and cover loosely with foil.
- Roast for about 3 to 4 hours or until the internal temperature reaches 165°F (74°C), basting every 30 minutes.
- Rest the turkey for at least 30 minutes before carving.
- Carve and serve with your favorite sides!

For the best flavor, prepare the herb butter a day in advance and consider brining the turkey overnight for enhanced moisture.
