This Dill Pickle Parmesan Chicken combines tangy dill pickle flavors with the richness of Parmesan for a unique and delicious meal.

- 2 boneless skinless chicken breasts
- 1 cup dill pickle juice
- 3/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (Panko or gluten-free)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried dill
- 1 egg
- 1 tablespoon olive oil or melted butter
- 1/4 cup mayonnaise or Greek yogurt
- 1/4 cup chopped dill pickles
- 1 tablespoon fresh dill (plus more for garnish)
Instructions
- Marinate the chicken by placing it in a bowl or ziplock bag with dill pickle juice for at least 1 hour.
- Prepare the coating by mixing Parmesan, breadcrumbs, garlic powder, onion powder, and dried dill in a shallow bowl.
- Beat the egg in a separate bowl for the egg wash.
- Dredge the chicken in the egg wash, then coat it with the Parmesan mixture.
- Preheat your oven to 400°F (200°C) and place the coated chicken on a greased baking sheet.
- Bake for 25 to 30 minutes until golden brown and cooked through.
- Mix the sauce by whisking together mayonnaise (or Greek yogurt) with chopped dill pickles and fresh dill.
- Serve the chicken drizzled with the creamy sauce and garnish with more dill.
Notes
For added flavor, marinate overnight. You can also use an air fryer at 375°F (190°C) for 15-20 minutes.
