Description

This Dill Pickle Parmesan Chicken combines tangy dill pickle flavors with the richness of Parmesan for a unique and delicious meal.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup dill pickle juice
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (Panko or gluten-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • 1 egg
  • 1 tablespoon olive oil or melted butter
  • 1/4 cup mayonnaise or Greek yogurt
  • 1/4 cup chopped dill pickles
  • 1 tablespoon fresh dill (plus more for garnish)

Instructions

  1. Marinate the chicken by placing it in a bowl or ziplock bag with dill pickle juice for at least 1 hour.
  2. Prepare the coating by mixing Parmesan, breadcrumbs, garlic powder, onion powder, and dried dill in a shallow bowl.
  3. Beat the egg in a separate bowl for the egg wash.
  4. Dredge the chicken in the egg wash, then coat it with the Parmesan mixture.
  5. Preheat your oven to 400°F (200°C) and place the coated chicken on a greased baking sheet.
  6. Bake for 25 to 30 minutes until golden brown and cooked through.
  7. Mix the sauce by whisking together mayonnaise (or Greek yogurt) with chopped dill pickles and fresh dill.
  8. Serve the chicken drizzled with the creamy sauce and garnish with more dill.

Notes

For added flavor, marinate overnight. You can also use an air fryer at 375°F (190°C) for 15-20 minutes.
