Description

A vibrant and flavorful pasta salad featuring seasoned ground beef, colorful veggies, and a crunchy Doritos topping, perfect for any gathering.

Ingredients

Scale
  • 1 pound seasoned ground beef
  • 8 ounces pasta (e.g., rotini or macaroni)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1 bell pepper, diced
  • 1 cup shredded cheese (e.g., cheddar or Mexican blend)
  • 2 cups Doritos, crushed
  • 1/2 cup ranch dressing
  • 1/4 cup taco seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and let it cool.
  2. Prepare the Beef: In a skillet over medium heat, cook the seasoned ground beef until it’s browned and fully cooked. Drain off any excess fat and let it cool slightly.
  3. Combine the Ingredients: In a large mixing bowl, combine the cooled pasta, seasoned beef, halved cherry tomatoes, corn, diced bell pepper, and shredded cheese.
  4. Mix the Dressing: In a small bowl, whisk together the ranch dressing and taco seasoning until well combined. Pour this mixture over the pasta salad and toss until everything is combined.
  5. Add the Crunch: Gently fold in the crushed Doritos, reserving some for topping.
  6. Season and Serve: Adjust the salt and pepper to taste, give it a final toss, and serve chilled or at room temperature, topping with reserved Doritos.

Notes

For best texture, store Doritos separately until serving. Customize the salad by using black beans for a vegetarian option or different dressings.
