Description

Ingredients

  • 1 lb chicken breast, boneless and skinless
  • 1 package gnocchi
  • 2 cups fresh spinach
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the minced garlic for about 1 minute until fragrant.
  3. Cook the chicken breasts, seasoned with salt, pepper, and Italian seasoning, for 6-7 minutes per side until golden brown. Remove and let rest.
  4. Simmer the chicken broth in the same skillet, stirring to incorporate brown bits.
  5. Cook the gnocchi according to package instructions until they float.
  6. Add the heavy cream and spinach, stirring until the greens wilt.
  7. Return the sliced chicken to the skillet and stir to combine.
  8. Serve warm, garnished with cracked pepper if desired.
