Description

Delicious and quick Easy Chicken Quesadillas featuring layers of shredded chicken, creamy cheese, and refried beans wrapped in golden tortillas.


Ingredients

  • 1 can refried beans
  • 2 cups shredded rotisserie chicken
  • 2 cups melted cheese (Monterey Jack or sharp cheddar)
  • 4 flour tortillas
  • 2 tablespoons olive oil
  • Sour cream and salsa for serving

Instructions

  1. Heat the skillet: Start by heating a non-stick skillet over medium heat and add a little olive oil.
  2. Spread the base: Take a tortilla and spread a layer of refried beans on one half.
  3. Add chicken and cheese: Pile on shredded chicken and a generous sprinkling of melted cheese.
  4. Fold and place: Carefully fold the tortilla in half and place it in the skillet.
  5. Cook to perfection: Cook for 2-3 minutes on each side until golden brown and the cheese melts.
