Description

A vibrant and flavorful pasta salad featuring fresh vegetables, olives, and creamy feta, perfect for sunny gatherings.


Ingredients

  • 2 cups cooked pasta (any variety)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Combine the cooked pasta, cherry tomatoes, cucumbers, red bell pepper, red onion, olives, and feta cheese in a large mixing bowl.
  2. Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a separate bowl.
  3. Pour the dressing over the pasta mixture and gently toss everything together.
  4. Sprinkle fresh parsley over the top just before serving.
  5. Chill in the refrigerator for about 30 minutes to let flavors meld.

Notes
