- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Combine the cooked pasta, cherry tomatoes, cucumbers, red bell pepper, red onion, olives, and feta cheese in a large mixing bowl.
- Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a separate bowl.
- Pour the dressing over the pasta mixture and gently toss everything together.
- Sprinkle fresh parsley over the top just before serving.
