- 2 cups crispy rice cereal
- ½ cup Fruity Pebbles cereal
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 large fruit roll-up
- ½ cup Fruity Pebbles (for coating)
Instructions
- Melt the marshmallows and butter: In a large saucepan over medium heat, melt the butter, then add the marshmallows. Stir constantly until the mixture is smooth and creamy.
- Combine with cereals: Remove the saucepan from heat and fold in the crispy rice cereal and the ½ cup of Fruity Pebbles.
- Prepare the cream cheese filling: In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Assemble the sushi: Lay out the fruit roll-up on a clean surface and spread a layer of the cream cheese mixture.
- Add the crispy mixture: Spoon the crispy rice mixture on top of the cream cheese layer.
- Roll it up: Carefully roll the fruit roll-up tightly around the filling.
- Coat the sushi: Roll the sushi in the remaining Fruity Pebbles and slice into bite-sized pieces.
