Description

Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional)
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Boil sweet potatoes: Place your cubed sweet potatoes in a pot of boiling water. Cook until tender, about 15 minutes. Once cooked, drain and mash them until smooth for a creamy texture.
  2. Cook red lentils: In a separate pot, cook rinsed red lentils in water. Let them simmer until soft, approximately 15 minutes. Drain the lentils, ensuring no excess water remains.
  3. Mix ingredients: In a large mixing bowl, combine the mashed sweet potatoes, cooked lentils, finely chopped onion, minced garlic, cumin, paprika, and parsley (if using). Add salt and pepper to your liking. Mix thoroughly until well combined.
  4. Form patties: With your hands, shape the mixture into patties, ensuring they are compact but not too tightly packed, allowing them to cook evenly.
  5. Heat olive oil: In a skillet over medium heat, pour in the olive oil. Once hot, carefully place the patties in the skillet.
  6. Cook patties: Cook patties for about 5-7 minutes on each side or until they turn golden brown and develop a satisfying crunch.

Notes
