- 4 Boneless, skinless chicken breasts
- 1 cup Tzatziki
- 1/2 cup Crumbled feta cheese
- 1 cup Cherry tomatoes
- 1/2 cup Kalamata or green olives
- 2 tablespoons Extra virgin olive oil
- 3 cloves Garlic, minced
- 2 tablespoons Fresh lemon juice
- 1 tablespoon Oregano
- Salt to taste
- Pepper to taste
Instructions
- Heat 2 tablespoons of olive oil in a skillet over medium heat until it shimmers.
- Season both sides of the chicken breasts generously with salt, pepper, and oregano.
- Add the seasoned chicken to the skillet, cooking until golden brown, approximately 6-7 minutes per side.
- Remove the chicken from the skillet and let it rest on a plate.
- Add minced garlic to the skillet and sauté for about a minute until fragrant.
- Toss in the cherry tomatoes and olives, cooking until tomatoes soften, about 3-4 minutes.
- Return the chicken to the skillet, drizzle with lemon juice, and sprinkle with feta and tzatziki.
- Reduce heat and allow everything to cook together for a couple of minutes.
- Serve hot, garnished with fresh herbs if desired.
