Description

A flavorful Greek Chicken Dinner featuring juicy chicken, creamy tzatziki, and vibrant cherry tomatoes and olives, perfect for any occasion.


Ingredients

  • 4 Boneless, skinless chicken breasts
  • 1 cup Tzatziki
  • 1/2 cup Crumbled feta cheese
  • 1 cup Cherry tomatoes
  • 1/2 cup Kalamata or green olives
  • 2 tablespoons Extra virgin olive oil
  • 3 cloves Garlic, minced
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a skillet over medium heat until it shimmers.
  2. Season both sides of the chicken breasts generously with salt, pepper, and oregano.
  3. Add the seasoned chicken to the skillet, cooking until golden brown, approximately 6-7 minutes per side.
  4. Remove the chicken from the skillet and let it rest on a plate.
  5. Add minced garlic to the skillet and sauté for about a minute until fragrant.
  6. Toss in the cherry tomatoes and olives, cooking until tomatoes soften, about 3-4 minutes.
  7. Return the chicken to the skillet, drizzle with lemon juice, and sprinkle with feta and tzatziki.
  8. Reduce heat and allow everything to cook together for a couple of minutes.
  9. Serve hot, garnished with fresh herbs if desired.

Notes

Make-Ahead Tips: Prepare the chicken and tzatziki a day before for deeper flavors. Use an air fryer for a healthier version.
