- 1 (8 oz) package cream cheese, softened
- 1/2 cup honey
- 1 cup sour cream
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup roasted pistachios, chopped
- Additional honey for drizzling
- Extra chopped pistachios for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
- Mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press into the bottom of the pan.
- Beat the cream cheese until smooth, then gradually add honey, sour cream, eggs, and vanilla, mixing until well combined.
- Fold in the chopped pistachios.
- Spread the cheesecake filling over the crust.
- Bake for 30-35 minutes until set and slightly golden.
- Cool at room temperature, then refrigerate for at least 4 hours.
- Serve chilled, drizzled with additional honey and sprinkled with chopped pistachios.
