Description

Indulge in the creamy and crunchy delight of Greek Honey Pistachio Cheesecake Bars, featuring a rich filling of honey and cream cheese atop a buttery graham cracker crust.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup honey
  • 1 cup sour cream
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup roasted pistachios, chopped
  • Additional honey for drizzling
  • Extra chopped pistachios for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press into the bottom of the pan.
  3. Beat the cream cheese until smooth, then gradually add honey, sour cream, eggs, and vanilla, mixing until well combined.
  4. Fold in the chopped pistachios.
  5. Spread the cheesecake filling over the crust.
  6. Bake for 30-35 minutes until set and slightly golden.
  7. Cool at room temperature, then refrigerate for at least 4 hours.
  8. Serve chilled, drizzled with additional honey and sprinkled with chopped pistachios.

Notes

Consider substituting honey with maple syrup or pistachios with walnuts or almonds. Let cream cheese soften fully before mixing to avoid lumps.
