Description

Deliciously cheesy Greek Quesadillas filled with chicken, feta, mozzarella, and fresh spinach, served with a refreshing tzatziki sauce.


Ingredients

  • 4 flour tortillas
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 cup cooked chicken, diced
  • 1/2 cup kalamata olives, sliced
  • 1/2 cup red onion, thinly sliced
  • 1 cup spinach, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for frying
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Prepare the tzatziki sauce: In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt. Stir well, then set aside to let the flavors meld.
  2. Mix the filling: In another bowl, combine feta cheese, mozzarella cheese, diced chicken, sliced olives, red onion, chopped spinach, dried oregano, and a sprinkle of salt and pepper. Mix well, ensuring the flavors meld together.
  3. Heat your skillet: On medium heat, pour a small amount of olive oil into a non-stick skillet. Allow it to heat until shimmering.
  4. Assemble the quesadilla: Place one tortilla in the skillet. On one half of the tortilla, layer half of the cheese mixture. Fold the other half over to cover the filling.
  5. Cook to perfection: Cook for 2-3 minutes on each side, or until the cheese melts and the tortilla turns golden brown. Keep an eye on it to prevent burning.
  6. Repeat: Use the remaining tortilla and filling to create another quesadilla, following the same steps.
  7. Serve: Cut the quesadillas into wedges, serve warm alongside the tzatziki sauce, and enjoy!

Notes

Make the tzatziki sauce a day in advance for best flavor. Customize with different vegetables or cheeses as desired.
