- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 cup cooked chicken, diced
- 1/2 cup kalamata olives, sliced
- 1/2 cup red onion, thinly sliced
- 1 cup spinach, chopped
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil for frying
- 1 cup Greek yogurt
- 1 cucumber, grated
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Prepare the tzatziki sauce: In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt. Stir well, then set aside to let the flavors meld.
- Mix the filling: In another bowl, combine feta cheese, mozzarella cheese, diced chicken, sliced olives, red onion, chopped spinach, dried oregano, and a sprinkle of salt and pepper. Mix well, ensuring the flavors meld together.
- Heat your skillet: On medium heat, pour a small amount of olive oil into a non-stick skillet. Allow it to heat until shimmering.
- Assemble the quesadilla: Place one tortilla in the skillet. On one half of the tortilla, layer half of the cheese mixture. Fold the other half over to cover the filling.
- Cook to perfection: Cook for 2-3 minutes on each side, or until the cheese melts and the tortilla turns golden brown. Keep an eye on it to prevent burning.
- Repeat: Use the remaining tortilla and filling to create another quesadilla, following the same steps.
- Serve: Cut the quesadillas into wedges, serve warm alongside the tzatziki sauce, and enjoy!
