Description

A comforting grilled sandwich featuring savory chicken, creamy avocado, and gooey melted cheese for a satisfying meal.


Ingredients

  • 2 slices bread (sourdough, whole wheat, or classic sandwich)
  • 1 cup cooked chicken (sliced or shredded)
  • 1/2 ripe avocado
  • 2 slices cheese (cheddar or mozzarella)
  • 1 tbsp butter or mayonnaise
  • Pinch of salt
  • Pinch of black pepper
  • Optional add-ons: tomato slices, red onion, spinach or arugula, hot sauce, or red pepper flakes

Instructions

  1. Prepare Avocado: Slice or mash the avocado until creamy, and sprinkle with a pinch of salt and pepper.
  2. Warm the Chicken: Heat the cooked chicken in the microwave for about 30 seconds, or warm in a skillet over medium heat.
  3. Assemble the Sandwich: Layer cheese on one slice of bread, followed by warm chicken, avocado, and any desired toppings. Cap it with another slice of cheese and bread.
  4. Butter the Outside: Spread a thin layer of butter or mayonnaise on both outer sides of the sandwich.
  5. Grill to Golden: Place the sandwich in the preheated skillet and grill for 3-4 minutes on each side.
  6. Slice and Serve: Once golden, remove from heat, slice in half, and serve warm.
