- 2 cups Crushed Pineapple (drained)
- 2 cups Whipped Cream
- 1 cup Shredded Coconut
Instructions
- Combine coconut milk, sugar, and cornstarch in a saucepan, whisking until smooth.
- Place the saucepan over medium heat, stirring constantly until thickened, about 5–7 minutes.
- Remove from heat and pour the pudding into serving containers to cool for 30 minutes.
- Chill the pudding in the refrigerator for at least two hours.
- In a large mixing bowl, combine crushed pineapple and whipped cream, folding gently.
- Add shredded coconut and mix delicately.
- Transfer the fluff to a serving bowl or cups and refrigerate for at least one hour before serving.
Notes
