Description

A delightful duo of creamy coconut pudding and refreshing pineapple fluff that captures the essence of Hawaiian desserts.


Ingredients

  • 1 can Coconut Milk
  • 1 cup Sugar
  • 1/4 cup Cornstarch
  • 2 cups Crushed Pineapple (drained)
  • 2 cups Whipped Cream
  • 1 cup Shredded Coconut

Instructions

  1. Combine coconut milk, sugar, and cornstarch in a saucepan, whisking until smooth.
  2. Place the saucepan over medium heat, stirring constantly until thickened, about 5–7 minutes.
  3. Remove from heat and pour the pudding into serving containers to cool for 30 minutes.
  4. Chill the pudding in the refrigerator for at least two hours.
  5. In a large mixing bowl, combine crushed pineapple and whipped cream, folding gently.
  6. Add shredded coconut and mix delicately.
  7. Transfer the fluff to a serving bowl or cups and refrigerate for at least one hour before serving.

Notes

Both desserts can be prepared a day in advance. Avoid overmixing the fluff to maintain its airy texture. Customize with toppings like nuts or fresh fruits.
