Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your cake pans to prevent sticking.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until thoroughly combined.
- In a separate bowl, beat together the buttermilk, vegetable oil, eggs, and vanilla extract, creating a luscious mixture.
- Gradually combine the wet mixture with the dry ingredients, stirring gently until just integrated.
- Pour in the boiling water and mix until smooth. The batter will be thin – that’s perfect for a moist cake.
- Divide the batter evenly into your prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a cooling rack. Allow to cool completely.
- While the cakes cool, prepare your strawberry filling. In a bowl, mix chopped strawberries with lemon juice and allow them to macerate for about 15 minutes.
- Beat together heavy whipping cream and sugar until soft peaks form. Fold in the reserved strawberry juice gently to give the cream a light pink tint and fresh flavor.
- Once the cakes are cool, slice each layer horizontally for a total of four layers. Begin layering: place one cake layer on a serving platter, spread a generous layer of the strawberry cream, and some chopped strawberries. Repeat the process until all layers are stacked.
- For the chocolate shell, melt dark chocolate with coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Drizzle the melted chocolate over the cake, letting it drizzle down the sides for a stunning effect.
- Garnish with additional strawberries on top, allowing the beauty to shine through.
