Description

Ingredients

  • 2 cups Granulated Sugar
  • 3/4 cup Unsweetened Cocoa Powder
  • 1 tablespoon Baking Powder

  • 1/2 cup Vegetable Oil
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Boiling Water
  • 2 cups Fresh Strawberries
  • 1 tablespoon Lemon Juice
  • 8 ounces Dark Chocolate
  • 2 tablespoons Coconut Oil

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pans to prevent sticking.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until thoroughly combined.
  3. In a separate bowl, beat together the buttermilk, vegetable oil, eggs, and vanilla extract, creating a luscious mixture.
  4. Gradually combine the wet mixture with the dry ingredients, stirring gently until just integrated.
  5. Pour in the boiling water and mix until smooth. The batter will be thin – that’s perfect for a moist cake.
  6. Divide the batter evenly into your prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring them to a cooling rack. Allow to cool completely.
  8. While the cakes cool, prepare your strawberry filling. In a bowl, mix chopped strawberries with lemon juice and allow them to macerate for about 15 minutes.
  9. Beat together heavy whipping cream and sugar until soft peaks form. Fold in the reserved strawberry juice gently to give the cream a light pink tint and fresh flavor.
  10. Once the cakes are cool, slice each layer horizontally for a total of four layers. Begin layering: place one cake layer on a serving platter, spread a generous layer of the strawberry cream, and some chopped strawberries. Repeat the process until all layers are stacked.
  11. For the chocolate shell, melt dark chocolate with coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
  12. Drizzle the melted chocolate over the cake, letting it drizzle down the sides for a stunning effect.
  13. Garnish with additional strawberries on top, allowing the beauty to shine through.
