Description

A comforting dish featuring tender chicken, pineapple, and bell pepper in a savory sweet and sour sauce, all made effortlessly in the Instant Pot.


Ingredients

  • 2 pounds chicken breast, cubed
  • 1 cup pineapple chunks
  • 1 bell pepper, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup brown sugar
  • 1/2 cup vinegar
  • 1/2 cup ketchup
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Combine Ingredients: In the Instant Pot, toss together the cubed chicken, pineapple, bell pepper, onion, brown sugar, vinegar, ketchup, soy sauce, and minced garlic.
  2. Mix and Season: Stir everything well until evenly coated. Add a sprinkle of salt and pepper to taste.
  3. Pressure Cook: Close the lid securely and set to pressure cook on high for 10 minutes.
  4. Release Pressure: Allow the pressure to release naturally for 5 minutes, then perform a quick release for any remaining pressure.
  5. Serve: Dish the mixture over a bed of hot, fluffy rice.
