Description

Delicious cupcakes that combine rich chocolate and creamy mascarpone in a delightful tiramisu-inspired treat.


Ingredients

  • 1 cup All-Purpose Flour
  • 1/2 cup Cocoa Powder
  • 1 tbsp Baking Powder
  • 3/4 cup Granulated Sugar
  • 2 large Eggs
  • 1/2 cup Milk
  • 1/3 cup Vegetable Oil
  • 1 cup Espresso
  • 1 cup Mascarpone Cheese
  • 2 tbsp Cocoa Powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the cupcake tray by lining 12 wells with muffin liners.
  3. Combine the dry ingredients: flour, cocoa powder, baking powder, and sugar in a large mixing bowl.
  4. Mix the wet ingredients: whisk together eggs, milk, and vegetable oil in a medium bowl.
  5. Incorporate the hot espresso into the wet ingredients.
  6. Combine the wet mixture with the dry ingredients gently, until just combined.
  7. Fill each cupcake liner about 2/3 full.
  8. Bake for about 18-20 minutes or until a toothpick comes out clean.
  9. Cool the cupcakes for about 5 minutes before transferring them to a wire rack.
  10. Make the frosting by beating mascarpone cheese until smooth, adding powdered sugar and vanilla extract.
  11. Frost the cooled cupcakes generously with mascarpone frosting and dust with cocoa powder.

Notes

Store in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze un-frosted cupcakes for up to 3 months.
