- 1 cup All-Purpose Flour
- 1/2 cup Cocoa Powder
- 1 tbsp Baking Powder
- 3/4 cup Granulated Sugar
- 2 large Eggs
- 1/2 cup Milk
- 1/3 cup Vegetable Oil
- 1 cup Espresso
- 1 cup Mascarpone Cheese
- 2 tbsp Cocoa Powder (for dusting)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the cupcake tray by lining 12 wells with muffin liners.
- Combine the dry ingredients: flour, cocoa powder, baking powder, and sugar in a large mixing bowl.
- Mix the wet ingredients: whisk together eggs, milk, and vegetable oil in a medium bowl.
- Incorporate the hot espresso into the wet ingredients.
- Combine the wet mixture with the dry ingredients gently, until just combined.
- Fill each cupcake liner about 2/3 full.
- Bake for about 18-20 minutes or until a toothpick comes out clean.
- Cool the cupcakes for about 5 minutes before transferring them to a wire rack.
- Make the frosting by beating mascarpone cheese until smooth, adding powdered sugar and vanilla extract.
- Frost the cooled cupcakes generously with mascarpone frosting and dust with cocoa powder.
Notes
Store in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze un-frosted cupcakes for up to 3 months.
