Description

A warm and hearty Kielbasa Potato Soup that combines smoky kielbasa and creamy potatoes for a comforting meal perfect for autumn evenings.

Ingredients

Scale
  • 1 lb kielbasa sausage
  • 4 medium potatoes
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons flour (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil over medium heat in a large pot or Dutch oven.
  2. Add the sliced kielbasa sausage, cooking for approximately 5-7 minutes until browned, then remove and set aside.
  3. Toss in the chopped onion and minced garlic, sautéing for 3-4 minutes until softened.
  4. Add the diced potatoes and chicken broth, stirring together, then bring to a boil.
  5. Reduce to a simmer for 10-15 minutes, or until the potatoes are tender.
  6. Whisk the flour into the milk separately, then gradually pour into the soup, stirring continuously.
  7. Stir in the whole milk and heavy cream, simmering for an additional 5-10 minutes.
  8. Return the cooked kielbasa to the pot and incorporate the dried thyme, seasoning with salt and pepper.
  9. Simmer for another 5 minutes.
  10. Ladle the soup into bowls, garnishing with fresh parsley if desired, and serve hot!

Notes

This soup can be made ahead and tastes even better the next day. For a thicker soup, you can add flour to create a roux.
