A warm and hearty Kielbasa Potato Soup that combines smoky kielbasa and creamy potatoes for a comforting meal perfect for autumn evenings.

- 1 lb kielbasa sausage
- 4 medium potatoes
- 1 medium onion
- 2 cloves garlic
- 4 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons flour (optional)
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil over medium heat in a large pot or Dutch oven.
- Add the sliced kielbasa sausage, cooking for approximately 5-7 minutes until browned, then remove and set aside.
- Toss in the chopped onion and minced garlic, sautéing for 3-4 minutes until softened.
- Add the diced potatoes and chicken broth, stirring together, then bring to a boil.
- Reduce to a simmer for 10-15 minutes, or until the potatoes are tender.
- Whisk the flour into the milk separately, then gradually pour into the soup, stirring continuously.
- Stir in the whole milk and heavy cream, simmering for an additional 5-10 minutes.
- Return the cooked kielbasa to the pot and incorporate the dried thyme, seasoning with salt and pepper.
- Simmer for another 5 minutes.
- Ladle the soup into bowls, garnishing with fresh parsley if desired, and serve hot!
Notes
This soup can be made ahead and tastes even better the next day. For a thicker soup, you can add flour to create a roux.
