Instructions
- Whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper in a mixing bowl until well combined.
- Add the flank steak to the bowl, ensuring it is fully coated in the marinade. Allow it to marinate in the refrigerator for at least 30 minutes.
- Preheat your grill or skillet over medium-high heat.
- Cook the marinated steak for about 4-5 minutes per side, adjusting the timing based on your desired level of doneness.
- Remove the steak from heat and let it sit for a few minutes before slicing it thinly against the grain.
- Warm the corn tortillas for about 30 seconds on each side until they are pliable.
- Assemble the tacos by placing sliced steak in each tortilla, then topping it with fresh cilantro, radish slices, and crumbled cotija cheese.
