Description

Delicious Low Tacos filled with marinated flank steak, fresh cilantro, and crunchy radishes, topped with creamy cotija cheese. Perfect for gatherings and flavor-packed dinners.


Ingredients

  • 1 lb flank steak
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Corn tortillas
  • Fresh cilantro, chopped
  • Radishes, sliced
  • Cotija cheese, crumbled

Instructions

  1. Whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper in a mixing bowl until well combined.
  2. Add the flank steak to the bowl, ensuring it is fully coated in the marinade. Allow it to marinate in the refrigerator for at least 30 minutes.
  3. Preheat your grill or skillet over medium-high heat.
  4. Cook the marinated steak for about 4-5 minutes per side, adjusting the timing based on your desired level of doneness.
  5. Remove the steak from heat and let it sit for a few minutes before slicing it thinly against the grain.
  6. Warm the corn tortillas for about 30 seconds on each side until they are pliable.
  7. Assemble the tacos by placing sliced steak in each tortilla, then topping it with fresh cilantro, radish slices, and crumbled cotija cheese.

Notes

For deeper flavors, marinate the steak a day in advance. Tacos can be customized with additional toppings like avocado or hot sauce.
