- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1/4 cup lemon curd

- 1 egg beaten with 1 tablespoon water (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry sheet on a lightly floured surface, cutting it into your desired shapes.
- Arrange the pastry shapes on a baking sheet lined with parchment paper.
- Brush the edges of each shape with the egg wash.
- Combine mascarpone cheese and powdered sugar in a bowl, mixing until smooth.
- Spoon a dollop of mascarpone mixture into the center of each pastry shape and add lemon curd on top.
- Fold the edges of the pastry over the filling, creating pockets.
- Brush the tops of the pastries with egg wash.
- Bake in the oven for 15-20 minutes until golden brown.
- Cool slightly and top with fresh berries before serving.
Notes
Make the mascarpone mixture a day in advance for best results. Consider using an air fryer as an alternative cooking method.
