Description

A vibrant dish that captures the essence of Mediterranean cuisine, featuring pasta, sun-dried tomatoes, olives, and feta cheese.


Ingredients

  • 8 oz pasta (spaghetti, penne, or fusilli)
  • 1/2 cup sun-dried tomatoes, packed in oil
  • 3 cloves garlic, minced
  • 1/2 cup olives (Kalamata or green), pitted
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (basil or parsley), for garnish

Instructions

  1. Cook the pasta: Boil a large pot of salted water, add the pasta, and cook until al dente. Drain and set aside.
  2. Sauté garlic: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until golden and fragrant, about 1-2 minutes.
  3. Add vegetables: Stir in sun-dried tomatoes and olives. Cook for about 5 minutes, allowing flavors to meld.
  4. Combine with pasta: Toss cooked pasta into the skillet, mixing well. Add reserved pasta water if needed.
  5. Incorporate feta: Crumble feta over the dish and gently mix without breaking it up excessively.
  6. Season to taste: Sprinkle with salt and freshly cracked black pepper, adding fresh herbs if using.
  7. Serve warm: Plate generously and garnish with additional herbs or a drizzle of olive oil.
