Description

Delightful mini desserts combining creamy cheesecake and fresh strawberries, perfect for any celebration.


Ingredients

Scale
  • 1 cup digestive biscuits or graham crackers
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1 cup whipped topping

Instructions

  1. Crush the biscuits in a zip-top bag or food processor until fine.
  2. Combine the crumbs with melted butter in a bowl.
  3. Line a cupcake tin with liners and press biscuit mixture into each liner.
  4. Beat cream cheese, sugar, and vanilla together until smooth.
  5. Swirl in strawberry puree gently.
  6. Spoon the cream cheese mixture over the biscuit bases.
  7. Top with whipped topping and a sliced strawberry.
  8. Chill for at least 120 minutes before serving.

Notes

You can prepare the cups a day ahead and customize with different toppings.
