Ingredients

- 1 cup digestive biscuits or graham crackers
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp pure vanilla extract
- 1 cup fresh strawberries, pureed
- 1 cup whipped topping
Instructions
- Crush the biscuits in a zip-top bag or food processor until fine.
- Combine the crumbs with melted butter in a bowl.
- Line a cupcake tin with liners and press biscuit mixture into each liner.
- Beat cream cheese, sugar, and vanilla together until smooth.
- Swirl in strawberry puree gently.
- Spoon the cream cheese mixture over the biscuit bases.
- Top with whipped topping and a sliced strawberry.
- Chill for at least 120 minutes before serving.
