- 4 Chicken Breasts
- 1 cup Orzo Pasta
- 1 cup Cherry Tomatoes, halved
- Feta Cheese, crumbled
- 3 cloves Garlic, minced
- 4 cups Chicken Broth
- 2 tbsp Olive Oil
- 2 tsp Greek Seasoning
- 2 cups Spinach, fresh (optional)
- Salt and Pepper, to taste
Instructions
- Sear the chicken: Warm olive oil in a large pot over medium-high heat. Season chicken with salt, pepper, and Greek seasoning. Sauté for 4-5 minutes per side until golden brown. Remove and set aside.
- Sauté the aromatics: In the same pot, add minced garlic and halved cherry tomatoes, cooking until the tomatoes soften, about 3-4 minutes.
- Add the orzo: Stir in orzo and pour in chicken broth, bringing to a gentle simmer.
- Nestle the chicken: Return the chicken to the pot, covering it with liquid. Cook for 10-12 minutes until orzo absorbs most of the liquid.
- Finish with feta and spinach: Fold in crumbled feta and spinach just before serving, allowing the spinach to wilt.
