Description

A savory and vibrant dish that transports you to the Mediterranean with every bite. This One Pot Greek Chicken and Orzo combines tender chicken, colorful vegetables, and creamy feta for a delightful meal.


Ingredients

  • 4 Chicken Breasts
  • 1 cup Orzo Pasta
  • 1 cup Cherry Tomatoes, halved
  • Feta Cheese, crumbled
  • 3 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 2 tbsp Olive Oil
  • 2 tsp Greek Seasoning
  • 2 cups Spinach, fresh (optional)
  • Salt and Pepper, to taste

Instructions

  1. Sear the chicken: Warm olive oil in a large pot over medium-high heat. Season chicken with salt, pepper, and Greek seasoning. Sauté for 4-5 minutes per side until golden brown. Remove and set aside.
  2. Sauté the aromatics: In the same pot, add minced garlic and halved cherry tomatoes, cooking until the tomatoes soften, about 3-4 minutes.
  3. Add the orzo: Stir in orzo and pour in chicken broth, bringing to a gentle simmer.
  4. Nestle the chicken: Return the chicken to the pot, covering it with liquid. Cook for 10-12 minutes until orzo absorbs most of the liquid.
  5. Finish with feta and spinach: Fold in crumbled feta and spinach just before serving, allowing the spinach to wilt.

Notes

Make-Ahead Tips: Prepare chicken and chop veggies the day before. This recipe can also be adapted for air fryer or oven cooking.
