Instructions
- Preheat your oven to 400°F (200°C).
- Peel the carrots and cut them into uniform pieces—about 1 to 1.5 inches.
- In a large mixing bowl, combine the honey, orange juice, olive oil, salt, and pepper. Whisk together until smooth.
- Add the chopped carrots to the bowl, and toss until coated in the glaze.
- Spread the carrots out in a single layer on a baking sheet.
- Roast in the preheated oven for 20-30 minutes, stirring halfway through.
