Description

A delightful blend of sweet citrus and earthy undertones, these roasted carrots are glazed with honey and orange juice, making them a perfect side dish for any meal.


Ingredients

  • 2 tablespoons honey
  • 1 tablespoon orange juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and cut them into uniform pieces—about 1 to 1.5 inches.
  3. In a large mixing bowl, combine the honey, orange juice, olive oil, salt, and pepper. Whisk together until smooth.
  4. Add the chopped carrots to the bowl, and toss until coated in the glaze.
  5. Spread the carrots out in a single layer on a baking sheet.
  6. Roast in the preheated oven for 20-30 minutes, stirring halfway through.
  7. Remove from the oven and sprinkle with fresh parsley if desired. Serve warm.

Notes

For a make-ahead option, prepare the glaze a day in advance. Also, try adding a pinch of crushed red pepper flakes for a spicy twist.
