Description

A vibrant dish featuring grilled chicken topped with gooey mozzarella, fresh tomatoes, and basil pesto, finished with a drizzle of balsamic glaze.


Ingredients

  • 4 Chicken Breasts
  • 1 cup Mozzarella Cheese, sliced
  • 2 cups Fresh Tomatoes, diced
  • 1/2 cup Basil Pesto Sauce
  • 1/4 cup Balsamic Glaze
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with salt, pepper, and olive oil.
  3. Place the chicken on the grill and cook for 6-7 minutes on each side until it reaches an internal temperature of 165°F.
  4. Add slices of mozzarella cheese on top during the last few minutes of grilling.
  5. Remove the chicken from the grill and top with diced tomatoes and basil pesto sauce.
  6. Drizzle with balsamic glaze and serve immediately.

Notes

Make the pesto and tomatoes a day in advance for deeper flavors. Alternatives include baking or air frying the chicken.
