Description

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped pistachios
  • Butter and cocoa powder for greasing
  • Pistachios for garnish

Instructions

  1. Preheat the oven to 425°F (220°C). Grease four ramekins generously with butter and dust with cocoa powder.
  2. Combine the semi-sweet chocolate and butter in a microwave-safe bowl. Heat in 30-second intervals, stirring until smooth.
  3. Whisk in the powdered sugar until well combined and glossy.
  4. Crack in the eggs and egg yolks, adding the vanilla extract. Mix until smooth.
  5. Fold in the flour and chopped pistachios gently using a spatula.
  6. Divide the batter among the prepared ramekins, filling each to about three-quarters full.
  7. Bake for 12-14 minutes until the edges are firm but the center is soft.
  8. Let cool for 1 minute before inverting on plates.
  9. Garnish with chopped pistachios and serve immediately.
