Description

A delightful dessert blending crunchy pistachios with creamy Jello and soft cake, perfect for any gathering.


Ingredients

  • 1 cup roasted unsalted pistachio nuts, chopped
  • 1 package (3.4 oz) pistachio-flavored Jello
  • 1 cup sugar
  • 1 ½ cups cake flour (or all-purpose flour)
  • 8 oz cream cheese, softened
  • 3 large eggs
  • ½ cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan lightly.
  2. Whisk together the cake flour and sugar in a mixing bowl.
  3. Combine eggs, melted butter, and cream cheese in another bowl, beating until fluffy.
  4. Fold in the chopped pistachios.
  5. Gently mix the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the greased pan and smooth the top.
  7. Bake for 25-30 minutes until a toothpick comes out clean.
  8. Cool the cake on a rack before preparing to top.
  9. Mix Jello with water as per package instructions and let set in the fridge.
  10. Spread the softened Jello mixture over the cooled cake and garnish with crushed pistachios.

Notes

For extra moisture, brush a little milk over the cake before adding the Jello layer.
