- 1 cup roasted unsalted pistachio nuts, chopped
- 1 package (3.4 oz) pistachio-flavored Jello
- 1 cup sugar
- 1 ½ cups cake flour (or all-purpose flour)
- 8 oz cream cheese, softened
- 3 large eggs
- ½ cup melted butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan lightly.
- Whisk together the cake flour and sugar in a mixing bowl.
- Combine eggs, melted butter, and cream cheese in another bowl, beating until fluffy.
- Fold in the chopped pistachios.
- Gently mix the dry ingredients into the wet mixture until just combined.
- Pour the batter into the greased pan and smooth the top.
- Bake for 25-30 minutes until a toothpick comes out clean.
- Cool the cake on a rack before preparing to top.
- Mix Jello with water as per package instructions and let set in the fridge.
- Spread the softened Jello mixture over the cooled cake and garnish with crushed pistachios.
Notes
For extra moisture, brush a little milk over the cake before adding the Jello layer.
