Description

A heartwarming soup that combines the savory flavors of potstickers with a comforting broth and vibrant vegetables.


Ingredients

  • 1 package of pork dumplings
  • 4 cups chicken or vegetable broth
  • 1 cup bok choy, chopped
  • 1 cup mushrooms, sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Soy sauce to taste
  • Salt and pepper to taste
  • Sesame oil (optional)
  • Chili oil (optional)

Instructions

  1. Heat sesame oil in a large pot over medium heat, then add minced garlic and grated ginger, sautéing until fragrant.
  2. Pour in the chicken or vegetable broth and bring to a gentle boil.
  3. Add the pork dumplings and cook according to package instructions.
  4. Stir in the chopped bok choy, sliced mushrooms, and julienned carrot, simmering for 3-5 minutes.
  5. Season with soy sauce, salt, and pepper to taste.
  6. Ladle the soup into bowls, garnishing with chopped green onions and chili oil if desired.

Notes

Make-ahead tips: Prepare broth and chop vegetables a day in advance. Cook dumplings in an air fryer for a crispy texture if desired.
