A versatile and delicious quesadilla recipe with gooey cheese and endless filling options.

- 4 Flour tortillas
- 2 cups Shredded cheese (Monterey Jack, cheddar, or pepper jack)
- 1 cup Mixed fillings (grilled chicken, sautéed bell peppers, mushrooms, black beans, or spinach)
- Oil or butter for cooking
Instructions
- Heat the skillet over medium heat.
- Prepare the tortilla by laying one flat in the skillet for about 30 seconds.
- Sprinkle an even layer of cheese over half of the tortilla.
- Layer your choice of fillings on top of the cheese.
- Fold the empty half of the tortilla over to form a half-moon shape.
- Cook for 2–3 minutes until golden and crispy, then flip to cook the other side.
- Slice into wedges and serve with dips.
Notes
Allow quesadillas to rest for a minute after cooking for easier slicing. Customize with different ingredients as desired.
