Description

Indulgent Raspberry Cream Cheese Bars with a crunchy graham cracker crust and fluffy cream filling, perfect for any occasion.

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1 tablespoon lemon juice
  • 1/2 cup heavy cream

Instructions

  1. Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs and melted butter. Press firmly into the bottom of a greased 9×9 inch pan.
  2. Cream Cheese Mixture: In a large bowl, beat together softened cream cheese, powdered sugar, and vanilla until smooth.
  3. Add Fresh Fruit: Gently fold in raspberries and lemon juice, preserving raspberry shape.
  4. Whip the Cream: In a separate bowl, whip heavy cream until stiff peaks form and fold into cream cheese mixture gently.
  5. Combine and Set: Pour the cream mixture over the cooled crust and spread evenly.
  6. Chill: Refrigerate for at least 4 hours before slicing.

Notes

For best results, ensure cream cheese is fully softened. These bars can be made a day in advance.
