Description

Indulge in tender red velvet sandwich cookies filled with luscious cream cheese frosting, perfect for any celebration.


Ingredients

  • 1 2/3 cups all-purpose flour
  • 1 1/2 tbsp cocoa powder
  • 2 tsp cornstarch
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (soft)
  • 1/2 cup white sugar
  • 1/3 cup brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp vinegar
  • 2 tsp red food coloring (liquid or gel)
  • 1/4 cup unsalted butter (softened)
  • 2 tbsp vegetable shortening
  • 3 oz cream cheese (softened)
  • 1 1/22 cups powdered sugar
  • 1/4 tsp salt
  • 1 tbsp heavy cream (if needed)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the flour, cocoa powder, cornstarch, baking soda, and salt in a medium mixing bowl and set aside.
  3. Cream the softened butter with both sugars until light and fluffy (about 3-5 minutes).
  4. Add the egg, vanilla extract, vinegar, and red food coloring to the mixture and beat until well combined.
  5. Blend in the dry ingredients gradually until no flour streaks remain.
  6. Scoop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until edges are set but centers appear soft.
  8. Cool on a rack completely.
  9. Cream the cream cheese, butter, and shortening in a mixing bowl until light and fluffy.
  10. Add in the powdered sugar gradually and mix until fully incorporated.
  11. Spread cream cheese frosting on the flat side of one cookie, then top with another cookie.

Notes

Store in an airtight container for up to a week. Use parchment paper between layers if freezing.
