- 3/4 tsp baking soda

- 1/2 cup unsalted butter (soft)

- 1 large egg
- 1 tsp vanilla extract
- 1 tsp vinegar
- 2 tsp red food coloring (liquid or gel)
- 1/4 cup unsalted butter (softened)
- 2 tbsp vegetable shortening
- 3 oz cream cheese (softened)
- 1 1/2 – 2 cups powdered sugar
- 1/4 tsp salt
- 1 tbsp heavy cream (if needed)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the flour, cocoa powder, cornstarch, baking soda, and salt in a medium mixing bowl and set aside.
- Cream the softened butter with both sugars until light and fluffy (about 3-5 minutes).
- Add the egg, vanilla extract, vinegar, and red food coloring to the mixture and beat until well combined.
- Blend in the dry ingredients gradually until no flour streaks remain.
- Scoop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are set but centers appear soft.
- Cool on a rack completely.
- Cream the cream cheese, butter, and shortening in a mixing bowl until light and fluffy.
- Add in the powdered sugar gradually and mix until fully incorporated.
- Spread cream cheese frosting on the flat side of one cookie, then top with another cookie.
Notes
Store in an airtight container for up to a week. Use parchment paper between layers if freezing.
