- 4 chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Cooking spray or additional olive oil for baking
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
- Add chopped spinach and roasted red peppers, cooking until the spinach wilts, about 2-3 minutes.
- Mix in shredded mozzarella, salt, pepper, and Italian seasoning until combined and creamy.
- Slice through the side of each chicken breast to create a pocket.
- Stuff each chicken breast with the spinach and cheese mixture.
- Place the stuffed chicken breasts in a baking dish and lightly spray with cooking spray or drizzle with olive oil.
- Bake for 25-30 minutes or until cooked through and juices run clear, aiming for an internal temperature of 165°F (75°C).
- Serve with your choice of sides.
Notes
Prep the filling a day ahead and refrigerate. Avoid cutting too deep into the chicken breasts when making the pockets.
