Description

A comforting dish featuring chicken breasts stuffed with a vibrant mix of roasted red peppers, fresh spinach, and gooey mozzarella.


Ingredients

  • 4 chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Cooking spray or additional olive oil for baking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
  3. Add chopped spinach and roasted red peppers, cooking until the spinach wilts, about 2-3 minutes.
  4. Mix in shredded mozzarella, salt, pepper, and Italian seasoning until combined and creamy.
  5. Slice through the side of each chicken breast to create a pocket.
  6. Stuff each chicken breast with the spinach and cheese mixture.
  7. Place the stuffed chicken breasts in a baking dish and lightly spray with cooking spray or drizzle with olive oil.
  8. Bake for 25-30 minutes or until cooked through and juices run clear, aiming for an internal temperature of 165°F (75°C).
  9. Serve with your choice of sides.

Notes

Prep the filling a day ahead and refrigerate. Avoid cutting too deep into the chicken breasts when making the pockets.
