Description

Delicious roasted sweet potato rounds topped with creamy brie, tart dried cherries, and crunchy walnuts, perfect for gatherings.


Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, sliced
  • 1/4 cup dried cherries
  • 1/4 cup walnuts, toasted and chopped
  • 1 tablespoon fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and slice them into 1/2-inch rounds.
  2. Combine the sweet potato rounds with olive oil, salt, and pepper in a large mixing bowl. Toss gently to coat.
  3. Spread the seasoned sweet potato rounds onto a baking sheet in a single layer. Roast for about 25-30 minutes, flipping halfway through.
  4. Add the sliced brie on each sweet potato round, and scatter dried cherries and toasted walnuts over the top, followed by fresh thyme.
  5. Return the rounds to the oven for an additional 5-7 minutes, until the brie softens.
  6. Remove the sheet from the oven, let cool slightly, and serve on a beautiful platter.

Notes

Can be made ahead of time; simply add toppings before serving. Experiment with different cheeses and nuts for custom flavors.
