Description

A vibrant salad featuring grilled salmon, fresh fennel, mixed greens, and juicy orange segments, perfect for a light and nourishing meal.


Ingredients

  • 2 salmon fillets
  • 1 bulb of fennel, thinly sliced
  • 1 cup mixed greens
  • 1 orange, segmented
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. Season the salmon fillets generously with salt and pepper.
  3. Cook the salmon on the grill or in the oven for about 6-8 minutes per side, or until it flakes easily with a fork.
  4. In a large mixing bowl, combine the sliced fennel, mixed greens, orange segments, and red onion.
  5. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Drizzle the dressing over the salad and toss gently to coat.
  7. Serve the salmon over the salad and garnish with fresh dill.

Notes
