  • 2 cloves Garlic (minced)
  • 1/2 cup Parmesan Cheese (grated)
  • Salt & Pepper (to taste)
  • 2 tbsp Olive Oil

Instructions

  1. Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a bit of the pasta water to help loosen the sauce if needed.
  2. Sear the Salmon: In a skillet, heat a drizzle of olive oil over medium heat. Once the oil shimmers, place the salmon fillets skin-side down. Cook for about 4-5 minutes on each side until golden brown and flaky. Remove from the skillet and flake into large chunks.
  3. Sauté the Garlic: In the same skillet, lower the heat slightly and add minced garlic. Sauté for about 1 minute until fragrant.
  4. Add Spinach: Toss the fresh spinach into the skillet, stirring until wilted, which usually takes about 2-3 minutes.
  5. Make the Cream Sauce: Pour in the heavy cream, stirring to combine everything. Bring to a gentle simmer, then stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  6. Combine Everything: Add the drained pasta and flaked salmon back into the skillet. Gently toss everything together, ensuring every piece is enveloped in the sauce. If the sauce needs loosening, add a splash of reserved pasta water.
  7. Serve and Garnish: Plate the pasta immediately, offering extra Parmesan for those who crave more cheesy goodness.

Notes
