Description

Ingredients

  • 1 lb ground breakfast sausage
  • 4 medium potatoes, peeled and diced into 1/2-inch cubes
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup chopped green onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: hot sauce, sour cream, or avocado slices

Instructions

  1. Heat a large skillet over medium heat and add the ground breakfast sausage. Cook until browned and fully cooked, breaking it apart into crumbles. Once cooked, remove the sausage and set aside, leaving the tasty grease in the pan.
  2. Add olive oil to the same skillet. When hot, toss in the diced potatoes, seasoning them with salt and pepper. Cook until they become golden brown and tender, about 15-20 minutes, stirring occasionally.
  3. Once the potatoes are cooked, remove them from the skillet and set aside. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Return the skillet to medium heat and pour the egg mixture into the skillet, stirring gently to scramble until the eggs are cooked, soft, and fluffy.
  5. Assemble your breakfast bowls by dividing the crispy potatoes and savory sausage among four bowls. Top generously with scrambled eggs, creamy cheddar cheese, and a sprinkle of fresh green onions.
  6. Serve immediately with optional toppings such as hot sauce, sour cream, or avocado slices.
