Description
A delightful dish combining the distinct flavors of sautéed bitter melon and creamy scrambled eggs, perfect for any occasion.
Ingredients
Scale
- 2 medium bitter melons (ampalaya)
- 2 eggs
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tomato, chopped
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Oil for cooking
Instructions
- Prepare the bitter melons: Slice the bitter melons thinly and remove the seeds, if desired.
- Sauté the vegetables: In a pan over medium heat, add enough oil to coat the bottom. Sauté garlic, onion, and tomato until soft, fragrant, and light golden brown.
- Add bitter melons: Incorporate the sliced bitter melons into the pan, stirring occasionally. Cook for about 5-7 minutes until tender but still slightly crisp.
- Egg time: In a separate bowl, beat the eggs well, and then pour them over the sautéed vegetables.
- Scramble gently: Stir gently to scramble the eggs along with the vegetables for about 2-3 minutes until the eggs are just cooked but still moist.
- Season as needed: Drizzle in soy sauce and sprinkle salt and pepper to taste, mixing well to combine the flavors.
- Finishing touch: Cook until the eggs are fully set and serve hot, garnishing with fresh herbs if desired.
Notes
Soaking bitter melon in salted water for about 30 minutes before cooking can help reduce its bitterness. Serve with steamed rice or your favorite protein.
