Description

Ingredients

  • 1 stick of butter (preferably European)
  • 4 cloves of garlic, minced
  • ½ lemon (zest and 1 tablespoon juice)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon cayenne or red pepper flakes
  • ½ teaspoon dried thyme
  • 1 tablespoon chives or green onions, sliced
  • 2 tablespoons fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: Rosemary sprig and smashed garlic

Instructions

  1. Prep the steak by allowing it to reach room temperature, pat dry, and season with salt, pepper, and garlic.
  2. Heat your cast iron skillet over high heat until it smokes.
  3. Sizzle the steak in the skillet with a touch of avocado oil, enjoying the sound.
  4. Flip the steak after a crust forms, adding butter, garlic, and herbs to baste.
  5. Check for doneness with a meat thermometer aiming for 130°F for medium-rare.
  6. Rest the steak for at least 5 minutes before slicing.
  7. Craft the cowboy butter by mixing the remaining ingredients until creamy.
  8. Slice the steak and top with a dollop of cowboy butter before serving.
