Ingredients

  • 2 lbs beef chuck, cut into bite-sized cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a skillet over medium-high heat. Sear the beef cubes on all sides until they achieve a golden-brown crust. Transfer the beef to your slow cooker.
  2. Add the chopped onion and minced garlic to the same skillet, sautéing until translucent and fragrant. After 2-3 minutes, add this mixture to the slow cooker along with the sliced carrots and diced potatoes.
  3. Pour in the beef broth and add the tomato paste, stirring well to combine. Season with thyme, rosemary, salt, and pepper.
  4. Cover the slow cooker and set it to cook on low for 6-8 hours or high for 4-5 hours.
  5. Serve hot, perhaps with a slice of crusty bread.
