- 1 teaspoon dried rosemary

Instructions
- Heat the olive oil in a skillet over medium-high heat. Sear the beef cubes on all sides until they achieve a golden-brown crust. Transfer the beef to your slow cooker.
- Add the chopped onion and minced garlic to the same skillet, sautéing until translucent and fragrant. After 2-3 minutes, add this mixture to the slow cooker along with the sliced carrots and diced potatoes.
- Pour in the beef broth and add the tomato paste, stirring well to combine. Season with thyme, rosemary, salt, and pepper.
- Cover the slow cooker and set it to cook on low for 6-8 hours or high for 4-5 hours.
