  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 package (3.4 ounces) pistachio pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two baking sheets lined with parchment paper.
  2. Cream the softened butter, brown sugar, and granulated sugar together until smooth and creamy.
  3. Incorporate the pistachio pudding mix, eggs, and vanilla extract, mixing until combined.
  4. Combine the flour, baking soda, and salt in a separate bowl.
  5. Blend the dry mix into the wet ingredients until just combined.
  6. Fold in the white chocolate chips and chopped pistachios.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheets.
  8. Bake for about 10-12 minutes or until edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Refrigerate dough overnight for extra flavor. Cookies can be made in an air fryer at 320°F (160°C) for 8-10 minutes.
