- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup honey
- 2 large eggs
- 1/2 cup shredded cheddar cheese
- 1 cup fresh corn kernels
- 1/4 cup unsalted butter, melted
- Additional honey butter for serving
Instructions
- Preheat your oven to 400°F (200°C) and generously grease your mini muffin tin.
- Mix the dry ingredients: In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt until combined.
- Combine wet ingredients: In a separate bowl, whisk together the buttermilk, honey, eggs, and melted butter until smooth.
- Combine the wet and dry: Pour the wet mixture into the dry ingredients; gently stir until just combined.
- Add cheese and corn: Fold in the shredded cheddar cheese and the fresh corn kernels.
- Fill the muffin tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
- Cool slightly before removing from the tin.
- Serve with a side of honey butter for dipping.
