Description

Deliciously sweet and savory cornbread poppers served with honey butter, perfect for any occasion.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup honey
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1 cup fresh corn kernels
  • 1/4 cup unsalted butter, melted
  • Additional honey butter for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and generously grease your mini muffin tin.
  2. Mix the dry ingredients: In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt until combined.
  3. Combine wet ingredients: In a separate bowl, whisk together the buttermilk, honey, eggs, and melted butter until smooth.
  4. Combine the wet and dry: Pour the wet mixture into the dry ingredients; gently stir until just combined.
  5. Add cheese and corn: Fold in the shredded cheddar cheese and the fresh corn kernels.
  6. Fill the muffin tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
  7. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
  8. Cool slightly before removing from the tin.
  9. Serve with a side of honey butter for dipping.

Notes
