- 100 grams confectioners sugar
- 2 tablespoons matcha powder
- 3 large egg whites
- 50 grams granulated sugar
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon green gel food coloring
- 100 grams unsalted butter
- 150 grams powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon heavy cream
- 1 teaspoon green gel food coloring
Instructions
- Preheat your oven to 150°C (300°F) and line two baking sheets with silicone mats or parchment paper.
- Sift the almond flour, confectioners sugar, and matcha powder in a large bowl.
- Whip the egg whites and cream of tartar until foamy, then gradually add the granulated sugar until stiff peaks form.
- Add in the green gel food coloring and gently fold until evenly distributed.
- Combine the sifted dry ingredients into the meringue in three additions, folding gently.
- Pipe 3-cm rounds onto the baking sheets and tap to release air bubbles.
- Rest the piped shells at room temperature for 30–40 minutes.
- Bake for 12–15 minutes, rotating halfway. Let cool completely.
- Beat the unsalted butter until creamy, then add powdered sugar, vanilla extract, heavy cream, and green food coloring.
- Assemble by pairing similar sized shells and piping buttercream onto one shell, sandwiching with the other.
- Refrigerate for at least 1 hour before serving.
Notes
Make-ahead by storing shells in the freezer. Experiment with colors and flavors for different occasions.
