Description

Delight in the festive cheer with these vibrant green macaron cookies filled with creamy matcha buttercream for a perfect St. Patrick’s Day treat.


Ingredients

  • 100 grams almond flour
  • 100 grams confectioners sugar
  • 2 tablespoons matcha powder
  • 3 large egg whites
  • 50 grams granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon green gel food coloring
  • 100 grams unsalted butter
  • 150 grams powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream
  • 1 teaspoon green gel food coloring

Instructions

  1. Preheat your oven to 150°C (300°F) and line two baking sheets with silicone mats or parchment paper.
  2. Sift the almond flour, confectioners sugar, and matcha powder in a large bowl.
  3. Whip the egg whites and cream of tartar until foamy, then gradually add the granulated sugar until stiff peaks form.
  4. Add in the green gel food coloring and gently fold until evenly distributed.
  5. Combine the sifted dry ingredients into the meringue in three additions, folding gently.
  6. Pipe 3-cm rounds onto the baking sheets and tap to release air bubbles.
  7. Rest the piped shells at room temperature for 30–40 minutes.
  8. Bake for 12–15 minutes, rotating halfway. Let cool completely.
  9. Beat the unsalted butter until creamy, then add powdered sugar, vanilla extract, heavy cream, and green food coloring.
  10. Assemble by pairing similar sized shells and piping buttercream onto one shell, sandwiching with the other.
  11. Refrigerate for at least 1 hour before serving.

Notes

Make-ahead by storing shells in the freezer. Experiment with colors and flavors for different occasions.
