- 2 Grilled Chicken Breasts, sliced
- 1 cup Fresh Strawberries, sliced
- 1/2 cup Pecans, chopped
- 4 cups Mixed Greens (spinach and arugula)
- 2 tablespoons Butter
- 1/4 cup Olive Oil
- 2 tablespoons Red Wine Vinegar
- 1 tablespoon Honey (optional)
- Salt and Pepper to taste
Instructions
- Preheat your grill or grill pan.
- Season the chicken breasts with salt and pepper.
- Grill the chicken until cooked through, about 6-7 minutes per side. Let it rest before slicing.
- Combine mixed greens, strawberries, and pecans in a large bowl.
- Melt butter in a small saucepan over medium heat. Remove from heat.
- Whisk in olive oil, vinegar, honey (if using), and seasoning.
- Drizzle vinaigrette over the salad and toss gently.
- Place sliced chicken atop the salad and serve immediately.
Notes
Feel free to substitute chicken with tofu for a vegetarian version. Customize by adding feta cheese or avocado.
