Description

A refreshing summer salad featuring grilled chicken, juicy strawberries, crunchy pecans, and a creamy vinaigrette.


Ingredients

  • 2 Grilled Chicken Breasts, sliced
  • 1 cup Fresh Strawberries, sliced
  • 1/2 cup Pecans, chopped
  • 4 cups Mixed Greens (spinach and arugula)
  • 2 tablespoons Butter
  • 1/4 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon Honey (optional)
  • Salt and Pepper to taste

Instructions

  1. Preheat your grill or grill pan.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken until cooked through, about 6-7 minutes per side. Let it rest before slicing.
  4. Combine mixed greens, strawberries, and pecans in a large bowl.
  5. Melt butter in a small saucepan over medium heat. Remove from heat.
  6. Whisk in olive oil, vinegar, honey (if using), and seasoning.
  7. Drizzle vinaigrette over the salad and toss gently.
  8. Place sliced chicken atop the salad and serve immediately.

Notes

Feel free to substitute chicken with tofu for a vegetarian version. Customize by adding feta cheese or avocado.
