- 2 cups strawberries, sliced
- 1/4 cup sugar (for strawberries)
- 2 cups all-purpose flour
- 1/4 cup sugar (for dough)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Whipped cream for serving
Instructions
- Preheat your oven to 425°F (220°C).
- Mix the sliced strawberries with 1/4 cup sugar and let them sit for about 30 minutes.
- Combine the flour, 1/4 cup sugar, baking powder, and salt in a bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the heavy cream and vanilla extract until just combined.
- Knead the dough gently on a floured surface, then roll it out to about 1 inch thick and cut out rounds.
- Bake for 12-15 minutes or until golden brown.
- Slice the cooled shortcakes in half and layer with macerated strawberries and whipped cream.
Notes
For a unique twist, try using blueberries or raspberries. To enhance flavors, experiment with lemon zest or different flavored extracts.
