Description

A luscious strawberry shortcake featuring tender shortcakes layered with fresh, juicy strawberries and fluffy whipped cream.


Ingredients

  • 2 cups strawberries, sliced
  • 1/4 cup sugar (for strawberries)
  • 2 cups all-purpose flour
  • 1/4 cup sugar (for dough)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix the sliced strawberries with 1/4 cup sugar and let them sit for about 30 minutes.
  3. Combine the flour, 1/4 cup sugar, baking powder, and salt in a bowl.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the heavy cream and vanilla extract until just combined.
  6. Knead the dough gently on a floured surface, then roll it out to about 1 inch thick and cut out rounds.
  7. Bake for 12-15 minutes or until golden brown.
  8. Slice the cooled shortcakes in half and layer with macerated strawberries and whipped cream.

Notes

For a unique twist, try using blueberries or raspberries. To enhance flavors, experiment with lemon zest or different flavored extracts.
