Ingredients

- 2 cups mashed sweet potatoes
- 1 cup cooked red lentils
- 1/2 cup breadcrumbs
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1 tsp cumin
- Salt and pepper to taste
- Oil for frying
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Water as needed
Instructions
- Combine the mashed sweet potatoes, cooked lentils, breadcrumbs, green onions, garlic, cumin, salt, and pepper in a large mixing bowl.
- Form the mixture into small patties, roughly the size of your palm, pressing gently to hold their shape.
- Heat oil in a frying pan over medium heat and place the patties in, cooking for about 4-5 minutes on each side until golden brown.
- Whisk together tahini, lemon juice, and water to make the dressing, adjusting the consistency with more water as needed.
- Serve the patties warm with the creamy tahini dressing drizzled on top.
Notes
Make-ahead by refrigerating patties for up to 2 days or freezing uncooked for a month. Use an air fryer or bake at 400°F for a healthier option.
