Description

Warm and crispy sweet potato patties packed with protein-rich red lentils, enhanced by a creamy tahini dressing.


Ingredients

Scale
  • 2 cups mashed sweet potatoes
  • 1 cup cooked red lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • Salt and pepper to taste
  • Oil for frying
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Water as needed

Instructions

  1. Combine the mashed sweet potatoes, cooked lentils, breadcrumbs, green onions, garlic, cumin, salt, and pepper in a large mixing bowl.
  2. Form the mixture into small patties, roughly the size of your palm, pressing gently to hold their shape.
  3. Heat oil in a frying pan over medium heat and place the patties in, cooking for about 4-5 minutes on each side until golden brown.
  4. Whisk together tahini, lemon juice, and water to make the dressing, adjusting the consistency with more water as needed.
  5. Serve the patties warm with the creamy tahini dressing drizzled on top.

Notes

Make-ahead by refrigerating patties for up to 2 days or freezing uncooked for a month. Use an air fryer or bake at 400°F for a healthier option.
