- 1 lb ground beef
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 head of lettuce, chopped
- 1 tomato, diced
- 1 avocado, diced
- 1/2 cup cilantro, chopped
- 1/4 cup lime juice
- 1/2 cup sour cream
- Salt and pepper to taste
- Taco seasoning (optional)
- Taco shells (homemade or store-bought)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it apart with a spatula. Drain any excess fat.
- Add taco seasoning if desired and mix well.
- For homemade taco shells, create dough bowls, shape them on a baking sheet, and bake for 10-12 minutes until golden.
- In a large bowl, combine black beans, shredded cheese, lettuce, tomato, and avocado.
- In a separate bowl, whisk together lime juice, cilantro, sour cream, salt, and pepper.
- Assemble the salad by spooning the beef mixture into taco shells and drizzling with the dressing.
- Serve immediately.
