Description

A vibrant and hearty taco salad featuring seasoned ground beef, black beans, fresh vegetables, and a zesty lime-cilantro dressing, all served in crispy taco shells.


Ingredients

  • 1 lb ground beef
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 head of lettuce, chopped
  • 1 tomato, diced
  • 1 avocado, diced
  • 1/2 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Taco seasoning (optional)
  • Taco shells (homemade or store-bought)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it apart with a spatula. Drain any excess fat.
  3. Add taco seasoning if desired and mix well.
  4. For homemade taco shells, create dough bowls, shape them on a baking sheet, and bake for 10-12 minutes until golden.
  5. In a large bowl, combine black beans, shredded cheese, lettuce, tomato, and avocado.
  6. In a separate bowl, whisk together lime juice, cilantro, sour cream, salt, and pepper.
  7. Assemble the salad by spooning the beef mixture into taco shells and drizzling with the dressing.
  8. Serve immediately.

Make-ahead tips: Prepare your beef and dressing ahead of time; store them separately to keep everything fresh. Assemble just before serving.
