Description

Ingredients

  • 2 lbs Pork Shoulder
  • 2 tbsp Chili Powder
  • 4 cloves Garlic, minced
  • 2 tsp Cumin
  • 1 cup Pineapple Juice
  • 1 Onion, diced
  • 8 Corn Tortillas
  • 1/2 cup Fresh Cilantro, chopped
  • 2 Limes, juiced

Instructions

  1. Marinate the Pork Shoulder: In a mixing bowl, combine chili powder, minced garlic, cumin, and pineapple juice. Whisk until well blended. Place the pork shoulder in a baking dish, coat it with the marinade, and cover it. Allow it to marinate in the refrigerator for at least 4 hours, ideally overnight.
  2. Grill the Marinated Pork: Preheat your grill to medium-high heat. Once hot, place the marinated pork on the grill, closing the lid. Cook for about 20-25 minutes, turning occasionally, until the pork reaches an internal temperature of 145°F and is charred.
  3. Slice the Pork: Remove the pork from the grill and let it rest for a few minutes. Using a sharp knife, thinly slice the meat against the grain.
  4. Warm the Tortillas: Place the corn tortillas on the grill for about a minute on each side, until soft and slightly charred.
  5. Assemble the Tacos: Load the warm tortillas with a generous amount of sliced pork. Top with diced onion, chopped cilantro, and a squeeze of lime.
  6. Serve Immediately: Enjoy these tacos fresh and warm with your choice of sides.
