- 2 lbs Pork Shoulder
- 2 tbsp Chili Powder
- 4 cloves Garlic, minced
- 2 tsp Cumin
- 1 cup Pineapple Juice
- 1 Onion, diced
- 8 Corn Tortillas
- 1/2 cup Fresh Cilantro, chopped
- 2 Limes, juiced
Instructions
- Marinate the Pork Shoulder: In a mixing bowl, combine chili powder, minced garlic, cumin, and pineapple juice. Whisk until well blended. Place the pork shoulder in a baking dish, coat it with the marinade, and cover it. Allow it to marinate in the refrigerator for at least 4 hours, ideally overnight.
- Grill the Marinated Pork: Preheat your grill to medium-high heat. Once hot, place the marinated pork on the grill, closing the lid. Cook for about 20-25 minutes, turning occasionally, until the pork reaches an internal temperature of 145°F and is charred.
- Slice the Pork: Remove the pork from the grill and let it rest for a few minutes. Using a sharp knife, thinly slice the meat against the grain.
- Warm the Tortillas: Place the corn tortillas on the grill for about a minute on each side, until soft and slightly charred.
- Assemble the Tacos: Load the warm tortillas with a generous amount of sliced pork. Top with diced onion, chopped cilantro, and a squeeze of lime.
- Serve Immediately: Enjoy these tacos fresh and warm with your choice of sides.
