Ingredients

- 2 cups rhubarb, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup water
- 1/2 cup sugar
- 1 teaspoon salt
- 1 cup celery, diced
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 cup vinegar
- 1 tablespoon liquid smoke
Instructions
- Chop and combine the rhubarb, onion, and garlic in a medium saucepan.
- Pour in enough water to cover the vegetables and bring to a boil over medium-high heat.
- Stir in sugar and salt, then add diced celery for added crunch.
- Add cloves, nutmeg, cinnamon, vinegar, and liquid smoke.
- Reduce heat and simmer, stirring occasionally, until the rhubarb softens, about 30 minutes.
- Blend the mixture using an immersion blender until smooth.
- Cool for at least 15 minutes before serving with grilled meats.
Notes
Store in an airtight container in the refrigerator for up to a week. Freezes well for about 3 months.
