Description

A unique BBQ sauce that blends the tartness of rhubarb with savory spices, perfect for enhancing grilled meats and veggies.


Ingredients

  • 2 cups rhubarb, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup water
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 cup celery, diced
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 cup vinegar
  • 1 tablespoon liquid smoke

Instructions

  1. Chop and combine the rhubarb, onion, and garlic in a medium saucepan.
  2. Pour in enough water to cover the vegetables and bring to a boil over medium-high heat.
  3. Stir in sugar and salt, then add diced celery for added crunch.
  4. Add cloves, nutmeg, cinnamon, vinegar, and liquid smoke.
  5. Reduce heat and simmer, stirring occasionally, until the rhubarb softens, about 30 minutes.
  6. Blend the mixture using an immersion blender until smooth.
  7. Cool for at least 15 minutes before serving with grilled meats.

Notes

Store in an airtight container in the refrigerator for up to a week. Freezes well for about 3 months.
